Steamer Polenta

Steamer polenta is a perfect gluten free, vegan, and guilt free vehicle for countless delicious ideas, savoury, and sweet.

Ingredients
  • 2 cups water or Nourish Broth or Vegetable Broth

  • 23 cups low-fat milk

  • 12 tsp salt

  • 1 cup polenta (coarse yellow cornmeal)

  • 1 recipe prepared Pesto Sauce

  • 2 tbsp Pesto Sauce Mix

  • 2 tbsp water

  • 2 tbsp pine nuts or pistachio nuts, optional

  • 1 tbsp grated Parmesan cheese

  • 14 cup olive oil

Instructions
  • Whisk all ingredients together in a Rectangular Steamer.

  • Place in microwave with lid on, and cook nonstop on high for 6–8 minutes (note: cooking time will vary depending on your microwave).

  • Remove from microwave and check that polenta is cooked, but a little soft. Serve immediately with your favourite toppings.
