Steamer Mushroom Risotto

Bring the bistro home! Make a quick and easy version of a restaurant classic.

Ingredients

  • 1 pkg Herb & Mushroom Hot Dip Mix
  • 2 cups sliced mushrooms
  • 2 tbsp unsalted butter
  • 4 cups Vegetable Broth, or 1 pkg (900 ml/30 oz) low-sodium vegetable broth
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 2 cups arborio rice
  • 1 cup frozen peas
  • 34 cup sour cream

Preparation

  1. Place dip mix, mushrooms, and butter in the Multipurpose Steamer. Cover and microwave on high 4 min.
  2. Meanwhile, warm broth in a small pot on the stove.
  3. Add warm broth and rice to steamer and cook uncovered on high for 5 min. Remove from microwave; stir in peas. Microwave uncovered on high for additional 8 min.
  4. Fold in sour cream. Add toppings, if desired.

Tips
