Ingredients

  • 12 lb (225 g) lean ground beef
  • 1 tbsp Fajita Seasoning
  • 1 cup Poco Picante Salsa, prepared
  • 2 tbsp Poco Picante Salsa Mix
  • 1 cup diced tomatoes
  • 1 tsp lime juice, optional
  • cilantro, optional
  • 1 cup Guacamole, prepared
  • 2 ripe avocados
  • 3 tbsp Guacamole Dip Mix
  • lime juice, optional
  • 12 cup grated low-fat cheddar cheese
  • 12 cup shredded lettuce

Preparation

  1. Place beef in a Rectangular Steamer. Microwave for 3 minutes on HIGH. Remove from microwave and drain excess fat. Sprinkle with Fajita Seasoning.
  2. Layer salsa and guacamole over beef, and top with cheese.
  3. Return to microwave for 2 minutes to melt cheese. Top with lettuce and serve.
