Steamed Mussels with Aioli
Ingredients
2 lbs (900 g) fresh mussels
1 cup Marinara Sauce
1 can (28 oz/796 ml) diced tomatoes
1 can (28 oz/796 ml) crushed tomatoes
3 tbsp Marinara Sauce Mix
1⁄4 cup water or white wine
1⁄4 cup Roasted Garlic Aioli
1 tbsp Roasted Garlic Aioli Mix
1 cup light mayonnaise
1 tsp lemon juice, optional
Preparation
Rinse mussels and remove beards.
In a Multipurpose Pot, bring Marinara Sauce and water to a boil on the stovetop. Add mussels. Cover and cook for 4–6 minutes, or until all mussels have opened. Stir halfway through cooking.
Discard any unopened mussels. Spoon mussels into bowls and top each with dollop of Roasted Garlic Aioli.
