Ingredients

  • 2 tsp olive oil
  • 2 mild or spicy Italian turkey sausages
  • 6 cups Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 2 cups Marinara Sauce, prepared
  • 1 can (28 oz/796 ml) diced tomatoes
  • 1 can (28 oz/796 ml) crushed tomatoes
  • 3 tbsp Marinara Sauce Mix
  • 2 cups cubed squash, or 4 carrots, chopped
  • 1 cup pearled farro
  • 4 cups spinach or kale, chopped
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Add oil to a large pot and set over medium-high heat. Add sausages and cook until browned. Remove to a cutting board. Slice into rounds.
  2. Pour Nourish Broth into pot. Scrape up and stir in any sausage bits left on the bottom. Stir in Marinara Sauce. Bring to a boil, then add squash and farro. Reduce heat, cover and simmer, stirring occasionally for 25–30 minutes, until farro is tender.
  3. Add spinach and cook for 2-3 minutes, until just wilted. Taste, then add Salt and Pepper. Spoon into bowls and drizzle with more olive oil, if desired.
