Spiral Greek Salad

Veggie spirals add a twist to the classic Greek salad recipe.

Ingredients
  • 2 English cucumbers, cut into 3” long rounds

  • 1 small red onion, sliced

  • 1 bell pepper, chopped

  • 4 tomatoes, cut into wedges

  • 14 cup Greek or black olives

  • 12 cup low-fat feta cheese

  • 2 tbsp Greek Dressing, prepared

  • 2 tbsp Greek Dressing Mix

  • 34 cup olive oil

  • 14 cup red wine vinegar

Instructions
  • Turn the cucumber into spirals with a Veggie Twist & Spiral Slicer.

  • Combine with remaining ingredients in a large mixing bowl.

  • Toss to coat with Greek Dressing. Serve immediately.
