Spinach and Pesto Tortellini Soup

Ingredients

  • 12 cups Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 tbsp Pesto Sauce Mix
  • 1 pkg (8 oz/225 g) refrigerated cheese-filled tortellini
  • 1 pkg (10 oz/280 g) frozen chopped spinach, thawed and drained of excess liquid
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 14 cup grated Parmesan cheese

Preparation

  1. In a large soup pot, bring Nourish Broth and Pesto Sauce Mix to a boil, then reduce temperature to medium-low.
  2. Stir in tortellini. Simmer uncovered for 5 minutes, or until tortellini is tender and floating. Add spinach and simmer until soup has reheated. Season with Salt and Pepper.
  3. Sprinkle each serving with Parmesan.
