Spicy Maple Grilled Chicken

A spiced rub and maple syrup create a flavourful glaze for grilled chicken. Tossed over a bed of greens, it makes a light meal. Don’t skimp on the hemp hearts! They’re rich in two essential fatty acids, which may help promote good heart health.

Ingredients

  • 14 cup maple syrup
  • 2 tbsp *Montreal Steak Rub or BBQ Chicken & Rib Rub
  • 2 tbsp oil
  • 1 lb (450 g) boneless, skinless chicken thighs
  • 1–2 tbsp hemp hearts

Preparation

  1. Preheat grill to medium-high.
  2. Meanwhile, in a small bowl, stir together maple syrup, rub, and oil.
  3. Place chicken in a large bowl. Pour half the marinade on top, about 3 tbsp. Stir to coat. If you have extra time, let stand 10 min or cover and refrigerate overnight.
  4. Place chicken on grill. Barbecue with lid closed, turning often, until cooked, about 12 min. Once cooked, immediately toss the chicken in the remaining marinade. Sprinkle with hemp hearts just before serving.

Tips

Cooking time may vary depending on thickness of your chicken and your grill. To test chicken for doneness, insert an instant read thermometer into the thickest part of the meat. It should register at 165° F.
