Spicy Lentil Taco Soup

Rich ‘n creamy, this soup is as satisfying as it is quick ‘n easy. It takes just 20 minutes to throw together and uses a handful of pantry staples like crushed tomatoes and lentils. Our feisty Taco Seasoning really packs the heat!

Ingredients

  • 1 pkg Taco Seasoning or see tip
  • 1 can (28 oz/796 ml) crushed tomatoes
  • 4 cups Vegetable Broth, prepared
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 can (15 oz/440 ml) lentils
  • 1 avocado, sliced
  • 1 cup grated cheddar cheese
  • 4 tbsp plain Greek yogurt
  • 1 cup tortilla chips

Preparation

  1. In a sauté pan, combine first four ingredients; bring to a boil and simmer 20 min.
  2. Ladle soup into four bowls. Top with avocado, cheese, and a dollop of yogurt.
  3. Garnish with tortilla chips and desired toppings.

Tips

To give the soup more body and robust texture, purée half, and then stir back in before serving.
