Ingredients

  • 3 cups Nourish Broth or Vegetable Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 tbsp Spinach Dip Mix
  • 1 12 cups long-grain rice
  • 2 cups frozen spinach
  • juice of 1 lemon
  • 1 recipe prepared El Greco Sauce, or sauce of your choice
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Place Broth, rice and Spinach Dip Mix in a Multipurpose Pot. Bring to a boil. Reduce heat to low and simmer, covered, for 15–20 minutes, until all the liquid is absorbed.
  2. Transfer to a serving bowl. Fold in spinach and lemon juice. Serve with a dollop of sauce. Season to taste.
