Souvlaki Salad with Pitas
Ingredients
1⁄2 lb (225 g) boneless, skinless chicken breasts
1 red or yellow pepper
1 cup mixed cherry tomatoes
1 small cucumber
2 whole wheat pitas
2 cups mixed greens
1⁄4 cup cubed low-fat feta cheese
2 tbsp black olives, optional
1⁄4 cup prepared Greek Dressing
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
Preparation
Thinly slice chicken. Place in a Multipurpose Steamer; cover and microwave on high for 3−5 min, or until cooked.
Meanwhile, slice bell pepper and cherry tomatoes. Dice cucumber. Cut pitas into triangles.
Arrange mixed greens, chicken, and veggies on plates.
Drizzle with dressing; serve with pitas on the side.
