Ingredients

  • 12 lb (225 g) boneless, skinless chicken breasts
  • 1 red or yellow pepper
  • 1 cup mixed cherry tomatoes
  • 1 small cucumber
  • 2 whole wheat pitas
  • 2 cups mixed greens
  • 14 cup cubed low-fat feta cheese
  • 2 tbsp black olives, optional
  • 14 cup prepared Greek Dressing
  • 2 tbsp Greek Dressing Mix
  • 34 cup olive oil
  • 14 cup red wine vinegar

Preparation

  1. Thinly slice chicken. Place in a Multipurpose Steamer; cover and microwave on high for 3−5 min, or until cooked.
  2. Meanwhile, slice bell pepper and cherry tomatoes. Dice cucumber. Cut pitas into triangles.
  3. Arrange mixed greens, chicken, and veggies on plates.
  4. Drizzle with dressing; serve with pitas on the side.
