Ingredients
1⁄2 lb (225 g) boneless, skinless chicken breasts
1 red or yellow pepper
1 cup mixed cherry tomatoes
1 small cucumber
2 whole wheat pitas
2 cups mixed greens
1⁄4 cup cubed low-fat feta cheese
2 tbsp black olives, optional
1⁄4 cup prepared Greek Dressing
2 tbsp Greek Dressing Mix
3⁄4 cup olive oil
1⁄4 cup red wine vinegar
Instructions
Thinly slice chicken. Place in a Multipurpose Steamer; cover and microwave on high for 3β5 min, or until cooked.
Meanwhile, slice bell pepper and cherry tomatoes. Dice cucumber. Cut pitas into triangles.
Arrange mixed greens, chicken, and veggies on plates.
Drizzle with dressing; serve with pitas on the side.
