Southern Grilled Chicken Sandwich

Ingredients
  • 12 tbsp Chipotle Aioli Mix or Roasted Garlic Aioli Mix

  • 12 cup mayonnaise

  • 12 tsp lemon juice, optional

  • 1 tbsp BBQ Chicken & Rib Rub or Buffalo Seasoning

  • 2 tsp oil + more for brushing

  • 1 lb (450 g) boneless, skinless chicken breasts, about 2 breasts

  • 4 burger buns, split

  • 1 medium tomato

  • 8 leaves butter lettuce

Instructions
  • In a small bowl, combine aioli mix, mayo, and lemon juice, if using. Set aside.

  • Preheat grill to medium-high. Lightly brush with oil.

  • In a small bowl, whisk together rub and oil. Cut chicken breasts in half, widthwise. Coat chicken with wet rub. Place on grill. Grill with lid closed until cooked, about 7–8 min per side. Add buns for the last 1 min of cooking; grill until lightly toasted.

  • Meanwhile, slice tomato.

  • To assemble, spread toasted buns with 1 tbsp aioli per sandwich, or more, as desired. Divide chicken, tomato, and lettuce between buns.
