Ingredients

  • 4 cups cooked baby potatoes, halved
  • 6 cups coleslaw mix
  • 2 cups mixed cherry tomatoes, halved
  • 2 cups cucumber ribbons
  • 1 avocado, sliced
  • 1 lb (450 g) Southern Baked chicken, prepared, cubed
  • 2 lbs (900 g) boneless, skinless chicken breasts
  • 1 tbsp oil
  • 1 pkg Southern Baked Gluten Free Crumb Mix
  • 34 cup Epicure dressing of your choice, prepared
  • Smoky Roasted Tomato Nutritional Yeast Topper, to taste (optional)

Preparation

  1. Arrange first six ingredients in four bowls
  2. Drizzle with your choice of dressing
  3. Shake on nutritional yeast sprinkle if using.
