“Sole”-ful Cuban Mojo Fish

This recipe is good for the body, mind, and “sole”! Fish is high in omega 3’s that promote heart health and even boost brain power! Grilling in foil packets is a fool-proof, less-mess way to prepare fish when you’re camping, so you can still get all the health benefits while out in nature.

Ingredients

  • 2 tbsp Cuban Mojo Marinade Mix or Herb & Garlic Dip Mix
  • 13 cup orange juice
  • 2 tbsp oil
  • 4 (5 oz/150 g each) sole fillets

Preparation

  1. Preheat grill to medium-high heat.
  2. In Round or Multipurpose Steamer, whisk mix, juice, and oil. Add fish to steamer; flip to coat. If you have time, cover and marinate 10–15 min.
  3. Place each fillet on its own sheet of aluminum foil and wrap up each fillet. Grill with lid closed for 10 min (do not flip).

Tips

If you like more citrusy notes with your fish, place a thin slice of lemon on each fillet before wrapping in foil.

No grill? Pan fry fillets with some of the marinade in Sauté Pan over medium-high heat, 2–3 min per side, or until golden.
