Slow Cooker Salsa Tacos
Make these tonight or assemble, toss in your slow cooker, and come home to a delicious meal. Take the night off cooking—you deserve it.
Ingredients
1 1⁄2 lbs (680 g) boneless skinless chicken breasts
2 cups prepared Vegetable Broth or Nourish Broth
1 1⁄2 tsp Vegetable Broth Mix
1 cup boiling water
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
2 cups prepared Poco Picante Salsa
2 tbsp Poco Picante Salsa Mix
1 cup diced tomatoes
1 tsp lime juice, optional
cilantro, optional
1–2 tbsp Fajita Seasoning or Taco seasoning
2 cups shredded mixed greens
1 cup shredded cheddar
1 cup prepared Guacamole
2 ripe avocados
3 tbsp Guacamole Dip Mix

16 corn tortillas
Preparation
Combine chicken, broth, salsa, and seasoning in a slow cooker and stir gently.
Cover; cook for 3 hours on high or 8 hours on low setting.
With two forks, pull chicken to shred. Stir to combine.
Divide shredded chicken, mixed greens, cheddar, and guacamole between tortillas to serve.
