Slow Cooker Chicken Cacciatore

Ingredients

  • 2 bell peppers, diced
  • 2 cups mushrooms, diced
  • 12 cup green olives
  • 2 - 3 tbsp Pesto Sauce Mix or Pizza Seasoning
  • 2 - 3 tbsp 3 Onion Dip Mix or Herb & Garlic Dip Mix
  • 3 cups Marinara Sauce, prepared
  • 1 can (28 oz/796 ml) diced tomatoes
  • 1 can (28 oz/796 ml) crushed tomatoes
  • 3 tbsp Marinara Sauce Mix
  • 1 cup Vegetable Broth or Nourish Broth, prepared
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 1 12 lbs (680 g) boneless skinless chicken breasts or thighs

Preparation

  1. Combine first seven ingredients in a slow cooker.
  2. Add chicken and stir gently to coat.
  3. Cover and cook for 3 hours on high or 6 hours on low setting.
  4. Place a large freezable bag standing open in a bowl; this will keep it in place when adding ingredients.
  5. Place all ingredients except broth in the bag, seal, and lay flat in the freezer.
  6. When ready to eat, remove from freezer at least 1 hour before cooking.
  7. Place contents in the slow cooker, add broth, cover, and cook for 3 hours on high or 6 hours on low setting.
