Skinny French Onion Soup

Makes enough for a buffet – keep warm in a crock pot with a platter of cheesy toasts on the side. Or, consider coffee mugs, and tuck toasts on the saucer.

Ingredients
  • 2 tbsp olive oil

  • 3 small cooking onions, thinly sliced

  • 2 sweet onions, such as Walla Walla, thinly sliced

  • 1 tbsp Herb & Garlic Dip Mix

  • 12 cup dry sherry or white wine

  • 6 cups Nourish Broth, prepared

  • 1 12 tsp Nourish Broth Mix

  • 1 cup boiling water

  • Sea Salt, to taste

  • Black Pepper, to taste

  • 12 slices baguette

  • 12 cup Greek yogurt

  • 13 cup grated Gruyère cheese

Instructions
  • In a large pot, heat oil over medium-high heat. Add onions, and reduce heat to medium. Stir often until onions are soft and caramelized, approximately 20–30 minutes.

  • Stir in Herb & Garlic Dip Mix, then pour in sherry. Using a spoon, scrape up, and stir in any brown bits from the bottom of the pan.

  • Stir in Nourish Broth, and season with Salt and Pepper. Bring to a boil, then cover, and simmer to let flavours blend, approximately 15 minutes.

  • Just before serving, preheat broiler to high with rack in highest position. Lightly spread each baguette slice with yogurt, then sprinkle with cheese. Spread out on a crisper, and broil until golden and melted, approximately 1 minute.

  • Ladle soup into bowls, and top with cheesy toasts.

Tips

Add or substitute chopped leeks for onion to give your soup a creamier, mellower texture and taste.
