Makes enough for a buffet – keep warm in a crock pot with a platter of cheesy toasts on the side. Or, consider coffee mugs, and tuck toasts on the saucer.

Ingredients

  • 2 tbsp olive oil
  • 3 small cooking onions, thinly sliced
  • 2 sweet onions, such as Walla Walla, thinly sliced
  • 1 tbsp Herb & Garlic Dip Mix
  • 12 cup dry sherry or white wine
  • 6 cups Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 12 slices baguette
  • 12 cup Greek yogurt
  • 13 cup grated Gruyère cheese

Preparation

  1. In a large pot, heat oil over medium-high heat. Add onions, and reduce heat to medium. Stir often until onions are soft and caramelized, approximately 20–30 minutes.
  2. Stir in Herb & Garlic Dip Mix, then pour in sherry. Using a spoon, scrape up, and stir in any brown bits from the bottom of the pan.
  3. Stir in Nourish Broth, and season with Salt and Pepper. Bring to a boil, then cover, and simmer to let flavours blend, approximately 15 minutes.
  4. Just before serving, preheat broiler to high with rack in highest position. Lightly spread each baguette slice with yogurt, then sprinkle with cheese. Spread out on a crisper, and broil until golden and melted, approximately 1 minute.
  5. Ladle soup into bowls, and top with cheesy toasts.
