Thanks to the lentils, this hearty meal is a good source of protein and an excellent source of fibre.
Ingredients
1 tbsp vegetable oil
16 oz (450 g) boneless, skinless chicken breast, chopped into pieces
2 celery ribs, diced
1 tbsp Toasted Onion
1⁄2 red bell pepper, diced
1 tsp Fajita Seasoning, or your choice, to taste
4 cups Nourish Broth
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1⁄4 cup dry red wine or nourish broth
1 can (14 oz/398 ml) lentils, drained and rinsed
Sea Salt, to taste
Black Pepper, to taste
Preparation
Heat Multipurpose Pot to medium; add vegetable oil and lightly brown chicken on all sides. Remove chicken with a slotted spoon and drain any excess oil from pot.
Add celery, Toasted Onion, and red bell pepper. Stir and heat until aromatic. Return chicken to pot and sprinkle with Seasoning.
Stir in prepared Nourish Broth and dry red wine if using. Bring to a simmer, reduce heat to low and gently simmer for approximately 20 minutes. Add canned lentils and heat until chicken is fully cooked. Season with Salt and Pepper.
