Shrimp with Tomato Sauce

Ingredients

  • 14 cup Toasted Onion
  • 14 cup diced red bell pepper
  • 1 tbsp Marinara Sauce Mix or Pizza Seasoning
  • 1 can (28 oz /796 ml) diced tomatoes
  • 1 lb (450 g) pre-cooked, frozen and peeled shrimp, thawed
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. In Multipurpose Pot, combine first 4 ingredients and simmer for 10 minutes with lid off. Sauce will thicken slightly.
  2. Lay thawed shrimp on paper towel to remove excess moisture. Add shrimp to sauce and cook for 2 minutes or until shrimp is heated through.
  3. Season with Sea Salt and Pepper.
  4. Serve over steamed rice or with your favourite cooked pasta. Top with a little crumbled Feta cheese if desired.
