Shrimp with Tomato Sauce

Ingredients
  • 14 cup Toasted Onion

  • 14 cup diced red bell pepper

  • 1 tbsp Marinara Sauce Mix or Pizza Seasoning

  • 1 can (28 oz /796 ml) diced tomatoes

  • 1 lb (450 g) pre-cooked, frozen and peeled shrimp, thawed

  • Sea Salt, to taste

  • Black Pepper, to taste

Instructions
  • In Multipurpose Pot, combine first 4 ingredients and simmer for 10 minutes with lid off. Sauce will thicken slightly.

  • Lay thawed shrimp on paper towel to remove excess moisture. Add shrimp to sauce and cook for 2 minutes or until shrimp is heated through.

  • Season with Sea Salt and Pepper.

  • Serve over steamed rice or with your favourite cooked pasta. Top with a little crumbled Feta cheese if desired.
