Ingredients

  • 1 tbsp olive oil
  • 1 fennel bulb, chopped
  • 1 onion, medium diced
  • 2 carrots, medium diced
  • 1 can (14 oz /398 ml) diced tomatoes
  • 1 12 cups Vegetable Broth, prepared
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • 1 tbsp Herb & Garlic Dip Mix
  • 1 lb (450 g) shrimp, peeled and deveined
  • 1 recipe prepared El Greco Finishing Sauce, or sauce of your choice
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Heat oil in a large pot over medium-high heat. Add chopped vegetables. Sauté, stirring frequently, until vegetables begin to soften, 3–5 minutes.
  2. Add tomatoes, broth, and dip mix. Stir and simmer, covered, for 10 minutes.
  3. Add shrimp and continue simmering until shrimp are pink and opaque, about 4 minutes.
  4. Drizzle with finishing sauce. Season to taste and serve.
