Shrimp Stew with Sauce

Ingredients
  • 1 tbsp olive oil

  • 1 fennel bulb, chopped

  • 1 onion, medium diced

  • 2 carrots, medium diced

  • 1 can (14 oz /398 ml) diced tomatoes

  • 1 12 cups Vegetable Broth, prepared

  • 1 12 tsp Vegetable Broth Mix

  • 1 cup boiling water

  • 1 tbsp Herb & Garlic Dip Mix

  • 1 lb (450 g) shrimp, peeled and deveined

  • 1 recipe prepared El Greco Finishing Sauce, or sauce of your choice

  • Sea Salt, to taste

  • Black Pepper, to taste

Instructions
  • Heat oil in a large pot over medium-high heat. Add chopped vegetables. SautĂ©, stirring frequently, until vegetables begin to soften, 3–5 minutes.

  • Add tomatoes, broth, and dip mix. Stir and simmer, covered, for 10 minutes.

  • Add shrimp and continue simmering until shrimp are pink and opaque, about 4 minutes.

  • Drizzle with finishing sauce. Season to taste and serve.
