Shrimp Cocktail Gazpacho

This recipe works well with other types of fish as well.

Ingredients

  • 1 lb (450 g) cooked shrimp
  • 1 red pepper, diced
  • 1 tomato, diced
  • 1 cucumber, diced
  • 3 cups Bloody Mary or Caesar Cocktail, prepared
  • 1 lemon or lime wedge
  • Caesar Rim Trimmer™, to taste
  • 4—5 ice cubes
  • 1—1 12 oz vodka
  • 1—2 tsp Caesar Mix
  • Clamato® juice, to taste
  • 1 lemon, cut into wedges, for garnish

Preparation

  1. Gently combine first four ingredients in a mixing bowl. Top with Bloody Mary or Caesar Cocktail.
  2. Ladle into small bowls.
  3. Use lemon wedges to garnish.
