Shrimp Cocktail Gazpacho
This recipe works well with other types of fish as well.
Ingredients
1 lb (450 g) cooked shrimp
1 red pepper, diced
1 tomato, diced
1 cucumber, diced
3 cups Bloody Mary or Caesar Cocktail, prepared
1 lemon or lime wedge
Caesar Rim Trimmer™, to taste
4—5 ice cubes
1—1 1⁄2 oz vodka
1—2 tsp Caesar Mix
Clamato® juice, to taste
1 lemon, cut into wedges, for garnish
Preparation
Gently combine first four ingredients in a mixing bowl. Top with Bloody Mary or Caesar Cocktail.
Ladle into small bowls.
Use lemon wedges to garnish.
