Shrimp and Avocado Sandwiches

Avocados are a great source of oleic acid, a monounsaturated fat, important for heart health. They are higher in fat than other fruits, so enjoy in moderation.

Ingredients

  • 14 cup Creamy Guacamole Dip, prepared
  • 3 tbsp Guacamole Dip Mix
  • 2 ripe avocados, peeled, pitted and mashed
  • 12 cup light sour cream
  • 1 tbsp lemon or lime juice
  • 1 cup baby shrimp
  • 14 cup diced bell pepper
  • 8 slices whole-grain bread, or crusty rolls, tortilla wraps or pita pockets

Preparation

  1. Gently fold shrimp and pepper into Guacamole Dip.
  2. Serve on bread.
