Sheet Pan Mediterranean Chops

Ingredients

  • 1 can (14 oz/398 ml) chickpeas
  • 1 zucchini
  • 1 sweet potato or yam (about 1/2 lb/225 g)
  • 1 12 tbsp olive oil
  • 1 pkg Chicken Souvlaki Seasoning, divided
  • 4 pork loin centre chops (about 2.2 lbs/1 kg)

Preparation

  1. Preheat oven to 425°F. Line Sheet Pan with Sheet Pan Liner.
  2. Drain and rinse chickpeas, pat dry. Place on pan.
  3. Slice zucchini on the diagonal. Cut peeled sweet potato in half lengthwise; thinly slice halves. Place on pan with chickpeas. Coat with 1 tbsp oil and 1⁄2 pkg seasoning; spread out in a single layer on pan.
  4. Coat chops with remaining oil and seasoning. Arrange on top of veggies.
  5. Roast, without stirring, until pork is cooked through, about 30 min.
