Shakshuka on a Budget

Ingredients
2 garlic cloves
1 bell pepper, optional
1⁄2 large yellow onion
2 tbsp olive oil
1 can (14 oz/398 ml) diced tomatoes
1 cup prepared Rosée Sauce
1 pkg Rosée Sauce Mix
1 1⁄2 cups milk, your choice
1⁄2 cup tomato paste
4 eggs
Preparation
Chop garlic, pepper (if using), and onion.
Heat oil in Sauté Pan over medium-high heat. Add chopped garlic and veggies; stir-fry until onions are soft, about 6–8 min.
Stir in tomatoes and sauce; bring to a simmer, about 3 min, stirring often.
Use the back of a spoon to form 4 shallow wells in the sauce mixture. Crack an egg into each well. Reduce heat to medium-low and cover; simmer 7–8 min, or until eggs are just set.
If desired, sprinkle cheese over shakshuka in pan. Cover; let simmer until cheese is melted, about 1 min.
