An Israeli dish of tomatoes, onions, pepper, spices, and eggs that you’ll have on the table in less than 25 minutes.
Ingredients
1 tbsp olive oil
1 onion, diced small
1 bell pepper, diced medium
1 tsp Minced Garlic
1 tsp hot sauce, optional
1 can (14 oz /398 ml) diced tomato, including liquid
1 tbsp Vegetable Seasoning
4 eggs
1⁄4 cup light feta, crumbled, optional
Sea Salt, optional
Black Pepper, optional
Preparation
Heat oil in a fry pan over medium-high heat. Add onions, peppers, Minced Garlic, and hot sauce. Sauté, stirring occasionally, for approximately 5 minutes, until vegetables soften.
Add tomatoes with liquid and seasoning. Reduce heat and simmer for 15 minutes or until mixture is slightly thickened.
Crack eggs over sauce. Cover with lid and simmer for a further 5 minutes or until eggs are set.
