Shakshouka

An Israeli dish of tomatoes, onions, pepper, spices, and eggs that you’ll have on the table in less than 25 minutes.

Ingredients
  • 1 tbsp olive oil

  • 1 onion, diced small

  • 1 bell pepper, diced medium

  • 1 tsp Minced Garlic

  • 1 tsp hot sauce, optional

  • 1 can (14 oz /398 ml) diced tomato, including liquid

  • 1 tbsp Vegetable Seasoning

  • 4 eggs

  • 14 cup light feta, crumbled, optional

  • Sea Salt, optional

  • Black Pepper, optional

Instructions
  • Heat oil in a fry pan over medium-high heat. Add onions, peppers, Minced Garlic, and hot sauce. SautĂ©, stirring occasionally, for approximately 5 minutes, until vegetables soften.

  • Add tomatoes with liquid and seasoning. Reduce heat and simmer for 15 minutes or until mixture is slightly thickened.

  • Crack eggs over sauce. Cover with lid and simmer for a further 5 minutes or until eggs are set.

  • Garnish with feta, and season to taste.
