Ingredients
  • 12 lime or 1 tbsp lime juice

  • 2 tbsp olive oil

  • 1 tsp Sesame Noodle Salad Dressing Mix or Sesame Ginger Dressing Mix

  • 14 English cucumber

  • 12 cup cherry tomatoes

  • 3 cups spring mix greens

  • 12 cup matchstick carrots

Instructions
  • In a large bowl, squeeze in lime juice and whisk with oil and dressing mix.

  • Chop cucumber and slice cherry tomatoes in half.

  • Add greens, cucumber, tomatoes, and carrots to bowl; toss with dressing to combine.

  • Divide between 2 bowls to serve.
