Saucy Beefed-Up Power Bowl

Ingredients

  • 1 cup rice
  • 2 cups water
  • 4 large eggs
  • 14 cup brown sugar, packed
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp Asian Stir Fry Seasoning
  • 2 tsp sesame oil
  • 12 tsp sriracha, optional
  • 1 tsp olive oil
  • 225 g lean ground beef
  • 1 tbsp olive oil
  • 4 cups frozen spinach
  • 2 bell peppers, sliced
  • 2 green onions, thinly sliced
  • sesame seeds, optional garnish

Preparation

  1. In a Round or Multipurpose Steamer, add rice and water; microwave on high for 8–10 min.
  2. While rice is cooking, place eggs in medium saucepan; cover with water and cook on high heat until water is boiling. Add lid and turn off heat; let eggs sit 10 min.
  3. While eggs are cooking, whisk together brown sugar, soy sauce, Asian Stir Fry Seasoning, sesame oil, and sriracha (if desired) in a small bowl.
  4. In a large saucepan or Wok, add oil and ground beef and cook over medium-high heat for 3–5 min. Add 1⁄2 of sauce and cook mixture for an additional 2 min. Set aside.
  5. Run eggs under cold water; peel and half each egg.
  6. In the same large saucepan or wok, add spinach and remaining sauce; stir-fry for 2–3 min, until spinach is wilted.
  7. In 4 serving bowls, arrange rice, beef mixture, spinach mixture, sliced bell peppers, and egg halves. Garnish each bowl with sliced green onion and sesame seeds, if desired. Enjoy!
