Sante Fe Chicken Skewers
Be sure to leave time for marinating – it adds so much flavour and makes the chicken meltingly tender.
Ingredients
1 tbsp olive oil
1 tbsp Taco Seasoning
1 tbsp frozen limeade, defrosted, or margarita mix
1 tbsp tequila, optional
2 boneless, skinless chicken breasts, cut into large cubes
6 bamboo skewers
2 bell peppers, cut into large pieces
1 red onion, cut into thick strips
Preparation
Mix oil with Taco Seasoning, limeade and tequila, if desired. Add chicken and turn to coat evenly. Cover and refrigerate for at least 3 hours, or overnight.
Soak bamboo skewers in water for 10 minutes. Alternately thread with marinated chicken, peppers and onion.
Grill over medium-high heat, turning often for 10–15 minutes, until chicken is cooked through.
