Sante Fe Chicken Skewers

Be sure to leave time for marinating – it adds so much flavour and makes the chicken meltingly tender.

Ingredients

  • 1 tbsp olive oil
  • 1 tbsp Taco Seasoning
  • 1 tbsp frozen limeade, defrosted, or margarita mix
  • 1 tbsp tequila, optional
  • 2 boneless, skinless chicken breasts, cut into large cubes
  • 6 bamboo skewers
  • 2 bell peppers, cut into large pieces
  • 1 red onion, cut into thick strips

Preparation

  1. Mix oil with Taco Seasoning, limeade and tequila, if desired. Add chicken and turn to coat evenly. Cover and refrigerate for at least 3 hours, or overnight.
  2. Soak bamboo skewers in water for 10 minutes. Alternately thread with marinated chicken, peppers and onion.
  3. Grill over medium-high heat, turning often for 10–15 minutes, until chicken is cooked through.
