Salsa Veggie Skewers
Ingredients
2 zucchinis
2 bell peppers, cut into coarse chunks
1 red onion, cut into coarse chunks
2 tbsp vegetable oil
Sea Salt, optional, to taste
Black Pepper, optional, to taste
4 cups mixed greens
1⁄2 cup Poco Picante Salsa Dressing, prepared
1 recipe prepared Poco Picante Salsa
2 tbsp Poco Picante Salsa Mix
1 cup diced tomatoes
1 tsp lime juice, optional
cilantro, optional
2 tbsp olive oil
1 tsp sugar
Sea Salt , optional, to taste
Black Pepper , optional, to taste
Preparation
Using a Veggie Twist & Spiral Slicer, peel zucchini to form ribbons
Alternately thread prepared vegetables onto 12" Metal Skewers.
Using a basting brush, lightly brush vegetables with oil. Season to taste, if desired.
Grill over medium-high heat with lid closed for 8 minutes, turning frequently.
Serve on mixed greens topped with dressing.
