Salsa Veggie Skewers

Ingredients

  • 2 zucchinis
  • 2 bell peppers, cut into coarse chunks
  • 1 red onion, cut into coarse chunks
  • 2 tbsp vegetable oil
  • Sea Salt, optional, to taste
  • Black Pepper, optional, to taste
  • 4 cups mixed greens
  • 12 cup Poco Picante Salsa Dressing, prepared
  • 1 recipe prepared Poco Picante Salsa
  • 2 tbsp Poco Picante Salsa Mix
  • 1 cup diced tomatoes
  • 1 tsp lime juice, optional
  • cilantro, optional
  • 2 tbsp olive oil
  • 1 tsp sugar
  • Sea Salt , optional, to taste
  • Black Pepper , optional, to taste

Preparation

  1. Using a Veggie Twist & Spiral Slicer, peel zucchini to form ribbons
  2. Alternately thread prepared vegetables onto 12" Metal Skewers.
  3. Using a basting brush, lightly brush vegetables with oil. Season to taste, if desired.
  4. Grill over medium-high heat with lid closed for 8 minutes, turning frequently.
  5. Serve on mixed greens topped with dressing.

Tips

Swap any of the vegetables for your favourites! When in season, try squash ribbons, mushrooms, or eggplants.
