A one-dish wonder packed with heart healthy omega-3s.

Ingredients

  • 1 lb (450 g) potatoes, peeled and chopped
  • 2 tbsp 3 Onion Dip Mix
  • 13 cup skim milk
  • 2 cans (7.5 oz/213 g) low-sodium salmon, drained
  • 1 tbsp Lemon Dilly Dip Mix
  • 1 lemon, juice and rind
  • 3 tbsp Parmesan cheese, finely grated

Preparation

  1. Preheat oven to 400° F (205° C). Lightly oil a heat-proof serving dish.
  2. Combine potato and 3 Onion Dip Mix in a Rectangular Steamer. Microwave with lid on for 5 minutes on high. Mash potatoes with milk until desired consistency.
  3. Combine salmon with Lemon Dilly Dip Mix, lemon juice, and lemon rind. Spoon into heat-proof serving dish, top with mashed potatoes, and sprinkle with Parmesan.
  4. Bake for 15 minutes, or until potatoes start to turn golden brown.
