Salmon Caesar Salad

Omega-3-rich fish, fresh greens, and lower-fat Dressing make this an excellent healthy meal choice.

Ingredients

  • 4 skinless salmon fillets
  • 14 cup Caesar Dressing, prepared
  • 2 tbsp Caesar Dressing Mix
  • 2 tbsp light mayonnaise or Greek yogurt
  • 1 tbsp lemon juice
  • 14 cup olive oil
  • 14 cup milk, your choice
  • 2 crushed garlic cloves, optional
  • 12 cup fresh whole-wheat breadcrumbs
  • 1 tsp Pesto Sauce Mix
  • 1 head Romaine lettuce, separated into leaves

Preparation

  1. Preheat oven to 450° F (230° C).
  2. Place salmon on parchment-lined Sheet Pan. Spoon Caesar Dressing over each piece. Stir breadcrumbs with Pesto Herb Mix, then spoon over salmon.
  3. Bake for 8-10 minutes, until crumbs are golden and salmon is cooked through.
  4. Divide lettuce leaves among dinner plates and place salmon on top. Drizzle with more Caesar Dressing, if desired.
