Saffron Garlic Aioli

An excellent dip for seafood, chicken strips or vegetables. Delicious for dipping chilled asparagus.

Ingredients

  • 14 tsp saffron
  • 1 tbsp boiling water
  • 1 garlic clove, crushed
  • 12 cup mayonnaise
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Steep saffron in boiling water for 5 minutes.
  2. Add crushed garlic to mayonnaise. Add saffron and water.
  3. Season to taste with Sea Salt and Black Pepper.
  4. Cover and refrigerate for a minimum of 30 minutes to allow flavours to develop.
