Roasted Root Veggie Fries
Ingredients
1 1⁄2 lbs (680 g) assorted root vegetables, such as carrots, parsnips, and red onions
2 tbsp vegetable oil
2 tbsp Rosemary Garlic Seasoning, or your choice of Seasoning
Sea Salt, optional
Black Pepper, optional
Preparation
Preheat oven to 400° F (205° C). Adjust oven rack to middle.
In mixing bowl, combine chopped root vegetables with vegetable oil, Seasoning, Salt and Pepper. Toss to coat evenly.
Spread vegetables evenly over crisper and roast for 40 minutes. Vegetables should be fork tender but not soft when done.
