Roasted Balsamic Beets with Feta
Beets are at their best in the fall and winter, so add a pop of colour to your plates this season. They’re just as much a feast for the eyes as they are for the tastebuds, but here’s more to beets than just good looks: they’re jam packed with flavour and nutrients, too. Quick tip: toss the cooked beets, feta, and nuts with a few handfuls of fresh greens for a warm salad.
Ingredients
5 medium beets
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp Balsamic Vinaigrette Dressing Mix
1 tsp maple syrup or honey
1⁄3 cup crumbled feta or goat cheese
Preparation
Preheat oven to 425° F. Line Sheet Pan with Sheet Pan Liner.
Peel and chop beets into bite-size pieces. Place in Multipurpose Steamer. Cover and microwave for 10 min, or until softened.
Meanwhile, in a small bowl, combine oil, vinegar, dressing mix, and syrup.
Toss steamed beets with vinegar mixture and transfer to pan; bake 5 min.
Transfer to serving dish and top with feta and additional toppings, if desired.
