Rich, Creamy Macaroni and Cheese

Ingredients

  • 1 lb (450 g) macaroni
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 tbsp all-purpose flour
  • 1 12 cups 2% milk
  • 2 tbsp CCB Dip Mix
  • 3 cups grated low-fat cheddar cheese
  • 1 pinch cayenne pepper
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Cook macaroni according to package directions.
  2. Preheat Multipurpose Pot over medium heat. Add oil and butter.
  3. When butter melts into oil, whisk in flour. Cook for 3 minutes, stirring constantly.
  4. Slowly add milk, whisking to combine. Stir in CCB Dip Mix. Bring to a simmer.
  5. Using a wooden spoon, stir in cheddar, one cup at a time. Season to taste with cayenne pepper, Salt and Pepper.
  6. Add cooked pasta to pot. Stir to combine.
