Rice with Feta and Mint
This savoury side will delight the senses.
Ingredients
2 tbsp olive oil
1 cup long grain rice
2 cups Nourish Broth, prepared
1 1⁄2 tsp Nourish Broth Mix
1 cup boiling water
1⁄2 cup crumbled feta cheese
1⁄2 tsp mint
Sea Salt, to taste
Black Pepper, to taste
Preparation
Heat olive oil in Multipurpose Pot - 8 cup over medium heat. Stir in rice and cook for 1 minute. Add Nourish Bouillon, reduce heat to low, cover and cook for 20 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork.
Stir in crumbled feta cheese and Mint. Season with Sea Salt and Pepper.
