Rice with Feta and Mint

Ingredients

  • 2 tbsp olive oil
  • 1 cup long grain rice
  • 2 cups Nourish Broth, prepared
  • 1 12 tsp Nourish Broth Mix
  • 1 cup boiling water
  • 12 cup crumbled feta cheese
  • 12 tsp mint
  • Sea Salt, to taste
  • Black Pepper, to taste

Preparation

  1. Heat olive oil in Multipurpose Pot - 8 cup over medium heat. Stir in rice and cook for 1 minute. Add Nourish Bouillon, reduce heat to low, cover and cook for 20 minutes. Remove from heat and let stand for 5 minutes. Fluff with a fork.
  2. Stir in crumbled feta cheese and Mint. Season with Sea Salt and Pepper.
