Ingredients

  • 4 cups cooked pasta
  • 4 servings Easy Ratatouille
  • 1 can (14 oz/398 ml) diced tomatoes, drained
  • 2 bell peppers, diced
  • 1 small zucchini, diced
  • 12 eggplant, diced
  • 1 tbsp 3 Onion Dip Mix
  • 1 tbsp Pesto Sauce Mix
  • 2 tbsp olive oil
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 14 cup light Parmesan cheese

Preparation

  1. Cook pasta according to package directions in a pasta pot. Drain and rinse.
  2. Add Ratatouille and top with Parmesan. Serve.
