Ratatouille Black Bean Chili

Comforting veggie chilli can be made in minutes!

Ingredients

  • 1 small yam, coarsely chopped
  • 1 small zucchini, coarsely chopped
  • 1 - 2 tbsp Poco Picante Salsa Mix
  • 1 tsp 3 Onion Dip Mix
  • 1 can (14 oz/398 ml) diced tomatoes
  • 12 can (14 oz/398 ml) black beans, drained and rinsed

Preparation

  1. In a bowl or directly in Rectangular Steamer, combine all ingredients.
  2. Cover with lid and microwave on high for 8–10 minutes.
  3. Eat all by its lonesome, or serve on rice or quinoa.
