These little patties are a perfect way to transform leftover quinoa into a delicious meal.
Ingredients
2 cups cooked quinoa
1 cup breadcrumbs
1⁄4 cup parmesan cheese
2 tbsp Spinach Dip Mix
2 eggs, lightly beaten
1 tbsp vegetable oil
Preparation
In a 4-cup prep bowl, combine dry ingredients and stir in eggs.
Let rest for a few minutes to allow mixture to absorb moisture. Shape into patties.
Heat frying pan to medium. Add oil and pan-fry patties for approximately 5 minutes per side, until crisp and brown on the outside and warmed through.
