Quinoa Patties

These little patties are a perfect way to transform leftover quinoa into a delicious meal.

Ingredients
  • 2 cups cooked quinoa

  • 1 cup breadcrumbs

  • 14 cup parmesan cheese

  • 2 tbsp Spinach Dip Mix

  • 2 eggs, lightly beaten

  • 1 tbsp vegetable oil

Instructions
  • In a 4-cup prep bowl, combine dry ingredients and stir in eggs.

  • Let rest for a few minutes to allow mixture to absorb moisture. Shape into patties.

  • Heat frying pan to medium. Add oil and pan-fry patties for approximately 5 minutes per side, until crisp and brown on the outside and warmed through.
