Quickie Quesadilla

There isn’t much that’s easier to make on a weeknight than quesadillas. Spread your favourite Epicure dip on the tortillas, top with cheese and beans, fold and bake until warm and gooey. Leftovers are great in lunchboxes. Kids love cold pizza, so they’ll love cold quesadillas if they don’t have the option to heat them up at school. Get dunkin’ and serve with Guacamole and Salsa.

Ingredients

  • 4 flour or corn tortillas, 6"
  • 14 cup prepared 3 Onion Dip
  • 3 tbsp 3 Onion Dip Mix
  • 1 cup sour cream or plain yogurt
  • 1 cup mayonnaise
  • 1 can (14 oz/398 ml) black beans
  • 2 cups low-fat cheddar cheese

Preparation

  1. Preheat oven to 400° F (205° C). Arrange tortillas on a Sheet Pan lined with a Sheet Pan Liner.
  2. Spread dip on half of each of the tortillas. Top with beans and cheese, then fold tortillas over filling.
  3. Bake for 10 minutes or until cheese has melted and tortillas are starting to turn brown. Cut each quesadilla into wedges and serve.
