Quickie Pesto Pasta Toss

Ingredients

  • 1 lb (450 g) spinach fettucine
  • 14 cup Pesto Sauce Mix
  • 14 cup olive oil
  • 14 cup Parmesan cheese
  • 3 tbsp finely chopped pine nuts or pistachio nuts
  • 1 small zucchini, thinly sliced
  • 1 cup green peas
  • 1 cup Vegetable Broth, prepared
  • 1 12 tsp Vegetable Broth Mix
  • 1 cup boiling water
  • Sea Salt, to taste
  • Black Pepper, to taste
  • 12 cup grated Parmesan cheese

Preparation

  1. Cook pasta according to package directions.
  2. While pasta is cooking, mix together Pesto Sauce Mix, olive oil, Parmesan cheese and nuts. Heat in a frying pan.
  3. Add sliced zucchini, green peas and prepared Vegetable Bouillon and bring to a boil.
  4. Immediately add drained pasta and stir to coat. Season with Sea Salt and Pepper.
  5. Serve with Parmesan cheese.
