Pumpkin Spice Mini Loaf

Bake and freeze four mini loaves for on-demand treats or to give as homemade gifts.

Ingredients
  • 2 eggs

  • 1 cup pumpkin purĂ©e

  • 12 cup oil

  • 1 pkg Pumpkin Spice Loaf & Muffin Mix

Instructions
  • Using Basting Brush, generously oil Mini Loaf Pans.

  • In a large bowl, whisk eggs. Whisk in pumpkin purĂ©e and oil until evenly combined. Whisk in mix.

  • Scrape batter into pans; smooth tops. Microwave for 3 min on high, uncovered. Rest in pans for 2 min; invert onto wire rack to cool. Or, bake in preheated 350° F oven, 23—25 min. Cool in pans 10 min; unmold.

Tips
