‘Pumpkin’ Mousse Cheesecakes for Verrines

‘Verrine’ comes from verre, the French word for glass. A Verrine is an impressive appetizer or dazzling dessert elegantly presented in a petit glass.

Ingredients
  • 12 cup ginger cookie crumbs

  • 12 cup spreadable cream cheese

  • 4 tsp brown sugar, divided

  • 12 tsp Pumpkin Pie Spice

  • 12 cup whipping cream

Instructions
  • Place 1 tbsp crumbs in the bottom of 6 verrines. Set aside.

  • Beat cream cheese with 2 tsp brown sugar and Pumpkin Pie Spice.

  • Whip cream with remaining brown sugar in a separate bowl. Fold into cream cheese mixture. Divide between verrines.

  • Top with remaining crumbs and serve.
