Pumpkin Banana Bread Petites

Ingredients
  • 2 ripe, medium bananas

  • 2 eggs

  • 13 cup oil + more for brushing

  • 1 pkg Sweet Banana Bread & Muffin Mix

  • 1 tbsp Cinnamon, or Pumpkin Pie Spice

  • 14 cup pumpkin seeds

Instructions
  • Preheat oven to 350° F. Using Basting Brush, generously oil Perfect Petites and place on Sheet Pan.

  • In a bowl, mash bananas; you should have about 3⁄4 cup. Whisk in eggs and oil, then stir in mix and spice.

  • Evenly divide batter into Perfect Petites, about 1 scant tbsp per mold. Top with pumpkin seeds.

  • Bake 20—23 min, or until a toothpick inserted in the center comes out clean. Rest in pan until cool to the touch before unmolding, about 10 min.
