Pulled Pork Tacos
Fast and easy, tacos make an ideal meal any night of the week – especially when you have leftovers of Pulled Pork!
Ingredients
8 taco shells
1 1⁄2 cups Slow Cooker Pulled Pork, prepared and heated
1 pkg Pulled Pork Seasoning
1 cup ketchup
1⁄2 cup vinegar
1⁄2 cup brown sugar
1⁄4 cup water
5 lbs (2.5 kg) boneless pork shoulder or butt roast
1 cup shredded lettuce
1 cup diced tomatoes
1 cup grated low-fat cheese
1 lime
Preparation
Divide pulled pork between taco shells.
Top with lettuce, tomatoes and cheese.
Serve each with a lime wedge – a fresh squeeze of lime adds a delicious, authentic Mexican flavour to your tacos.
