Pulled Chicken Nourish Bowl
Ingredients
4 cups mixed greens
1 cup prepared Pulled Chicken,
warmed
1 pkg Pulled Chicken Seasoning
1 cup ketchup
1⁄2 cup vinegar
1⁄4 cup brown sugar
3 lbs (1.5 kg) boneless, skinless chicken
1 cup cherry tomatoes, halved
1 red pepper, diced
1⁄4 cup cooked grains, such as brown rice or quinoa
1⁄4 cup black or kidney beans
1⁄4 cup grated cheddar or Monterey Jack cheese
2 tbsp prepared Balsamic Vinaigrette , or your favorite Epicure dressing
2 tbsp Balsamic Vinaigrette Dressing Mix
3⁄4 cup olive oil
1⁄4 cup balsamic vinegar
Sea Salt, to taste
Black Pepper, to taste
Preparation
Arrange first seven ingredients in two serving bowls.
Drizzle with dressing.
