Pulled Chicken Grilled Caesar Salad

Ingredients

  • 12 recipe prepared Pulled Chicken, about 3 cups
  • 1 pkg Pulled Chicken Seasoning
  • 1 cup ketchup
  • 12 cup vinegar
  • 14 cup brown sugar
  • 3 lbs (1.5 kg) boneless, skinless chicken
  • 4 heads romaine lettuce
  • 4 tsp olive oil
  • 4 tsp SPG Seasoning

Preparation

  1. Preheat grill to medium-high.
  2. Place pulled chicken in Multipurpose Steamer. Cover and microwave on medium until warmed through, 5–7 min.
  3. Meanwhile, slice romaine in half lengthwise. Drizzle cut-sides with oil; sprinkle with seasoning.
  4. Place lettuce on grill, cut-sides down. Cover and grill until lightly charred and slightly wilted, 2 min.
  5. Place half romaine head on each plate and divide chicken over top. Serve with Parmesan and other toppings, if desired.
