Provençal Ratatouille

A taste of summer! Double the recipe and use leftovers in Sylvie’s Provençal Ratatouille Pie.

Ingredients

  • 12 cup olive oil
  • 1 cup diced onion
  • 2 garlic cloves, crushed
  • 3 tbsp tomato paste
  • 2 tsp Souvlaki Seasoning
  • 1 tbsp Herbes Provencales
  • 6 cups diced zucchini, quartered lengthwise and sliced
  • 2 red peppers, seeded and diced
  • 2 green peppers, seeded and diced
  • 6 tomatoes, peeled and coarsely chopped
  • Sea Salt, coarsely ground, to taste
  • Black Pepper, coarsely ground, to taste

Preparation

  1. Heat oil in a frying pan over medium heat. Add onion and garlic. Sauté until they begin to soften.
  2. Add tomato paste, Souvlaki Seasoning, Herbes Provençales, and zucchini. Stir and cook 5 minutes.
  3. Add peppers and tomatoes. Cook for 20 minutes, uncovered, stirring often.
  4. Season with Sea Salt and Black Pepper and serve.
