Ingredients

  • 3 cups rolled oats
  • 1 12 cups low-fat milk
  • 2 ripe bananas, mashed (about ¾ cup)
  • 2 12 scoops Power Up Vanilla Protein Blend
  • 13 cup packed brown sugar
  • 2 large eggs, lightly beaten
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 12 tsp salt
  • 12 cup toasted, chopped pecans

Preparation

  1. In a large mixing bowl, combine oats, milk, bananas, Power Up Vanilla Protein Blend, brown sugar, beaten eggs, baking powder, cinnamon, vanilla extract, and salt. Fold in toasted, chopped pecans.
  2. Divide mixture into 2 Muffin Makers. Microwave 1 tray at a time on medium-high for 10 min.
  3. Cool in pan for 5 min.
