Powered Up Banana Nut Muffins

Ingredients
  • 3 cups rolled oats

  • 1 12 cups low-fat milk

  • 2 ripe bananas, mashed (about ¾ cup)

  • 2 12 scoops Power Up Vanilla Protein Blend

  • 13 cup packed brown sugar

  • 2 large eggs, lightly beaten

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • 1 tsp vanilla extract

  • 12 tsp salt

  • 12 cup toasted, chopped pecans

Instructions
  • In a large mixing bowl, combine oats, milk, bananas, Power Up Vanilla Protein Blend, brown sugar, beaten eggs, baking powder, cinnamon, vanilla extract, and salt. Fold in toasted, chopped pecans.

  • Divide mixture into 2 Muffin Makers. Microwave 1 tray at a time on medium-high for 10 min.

  • Cool in pan for 5 min.
